Our cellar also offers organic products grown on a 14-hectare estate located on the south side of the hills of Traversetolo where there is a spring with a perennial pond. It has been a Certified Organic farm for over 20 years. The soil is grown in rotation with hay, chickpeas of two types (smooth white and black rough ancient), durum wheat and two varieties of soft wheat.
These products are made of stone ground, wholemeal and type 1 flour and ground flour with a traditional 0 cylinder type mill.
These flours are particularly suitable for products which need a medium and long leavening such as pizza and bread.
